  • Quality of the food value of raw and processed products
  • Production processes on food industries
  • Control of food quality and safety  in agro-food industries
  • Development of new products and/or improvement of current ones
  • Management systems for food quality and safety/ standardization
  • Certification of products and systems for production and processing of products and raw food
  • Sustainability of agro and food industries/food chain development
  • Research, development and consulting services in food technology, quality and safety


Course Structure

General issue: Food Technology

Type: MSc course (2nd cycle)

Credits: 120 ECTS

Diplomas: Master Degree (120 CTS – 4 semesters) or Post-Graduation Diploma (72 ECTS – 3 semesters)

Duration: 4 schoolar semesters (classes - 1st, 2nd and 3rd semesters; dissertation - 3rd and 4th semesters)


1st semester

Food Chemistry and Biochemistry (6.0 ECTS)

Food Analysis (6.0 ECTS)

Biological Indicators on Agro Industrial Quality (6.0 ECTS)

Fundamentals of Food Engineering (3.0 ECTS)

Legislation and Consumer Protection (3.0 ECTS)

Nutrition (6.0 ECTS)


Between 1st and 2nd semesters - Entrepreneurismship (3.0 ECTS)


2nd semester

Food toxicology  (6.0 ECTS)

*The students can apply for any one of the curricular unit among those offered by FCT from the list of "Free Curricular Units", which is annually approved by the Scientific Council of FCT. Among these "Free Curricular Units", the DCTB offers, among others, the curricular unit of "Tratamento e Valorização de Efluentes e Resíduos/ Treatment and Valorization of Efluents and Residues" that has compatible timetable with both the After Working Hours timetable and Condensed timetable (please, see the Timetable of Classes below).

Timetable of Classes

Two timetables are available:

After working hours: Monday to Friday, 6:30 pm – 00:00 pm

Condensed timetable: Thursday, 3:00 pm - 00:00 pm; Friday, 9:30 am – 00:00 pm

Any one of these timetables only runs with a minimum number of 10 students.



EU and non-EU citizens with a previous graduation of 180 ECTS (or equivalent) in any field of Engineering, Natural Sciences, Exact Sciences or a legal equivalent, with a minimum of 180 ECTS.

Holders of an academic, scientific or professional CV, recognized by the MTSA Scientific Commission, as demonstrating ability to undertake the study cycle.
